*nod* When I hear "gamy," it instinctually makes me think venison, even though I know deer's hardly the only game in town. But venison with juniper berries and/or in a red wine braise generally shows up on at least one or two fall menus around here - and you just reminded me to check the Flavor Bible for possible ideas :) (Deer gets four columns out of six in a two-page spread; highlighted ingredient pairings: juniper berries, onions, pears, pepper, stocks, wine. No big surprises to me. *G*)
