Date: 2013-08-24 14:02 (UTC)Salsa = sauce, and gochujang is a sauce, while kimchi most definitely isn't. Though if you wanted the chunkiness, you could use ssamjang? (And then replace the tortilla with a green leafy vegetable...XD)

Date: 2013-08-27 17:39 (UTC)You also remind me that I've wanted a more expanded version of the Flavor Bible for awhile now - it's pretty decent for Western cooking, but still seems to treat "ethnic" food as "ethnic" and not as integrated among ingredients as I would want, and the coverage is pretty limited to begin with. But being able to look up, say, 백김치 and be able to pair things cross-culturally with it that would be good taste combinations would be fabulous. Granted, I also feel like I should learn the classic pairings within given foodways as well ... where's my culinary library, dammit?
